Honey Sweetened Greek Yogurt with Saffron and Pistachios

Some couples fight about money, kids, and other important life issues, we fight about food!

It's usually a back and forth argument deciding what to have for breakfast or what restaurant to go to on the weekend.

I like the all in one approach for breakfast; smoothies, muffins porridge and the like. He likes to have a table spread with all kinds of cheeses, bread and condiments.

I like dry stir fries, he likes wet brothy stocks. I like the more trendy restaurants and coffee shops he prefers the old traditional ones.

When I made him taste this saffron greek yogurt he gave me a look of a disgusted person :  " why do you love yogurt that much ?! "

Maybe one day I will win his heart and stomach to like it, but until then I will be enjoying my greek yogurt perfectly creamy and slightly tangy for breakfast any day.


1 cup greek yogurt *
1/8 tsp saffron threads dissolved in 1 Tbs hot water, cooled
2 Tbs honey
1/8 cup coarsely chopped pistachios, divided

- In a large bowl combine yogurt with saffron and honey.
- Assemble your "parfait" by placing half of the pistachios in the bottom of a bowl or glass. Add yogurt mixture and top with remaining pistachios.

* Greek yogurt is just strained yogurt. You can make it yourself by straining regular yogurt in a colander lined with kitchen towel, put over a large bowl to catch the liquid and put in the refrigerator overnight.
