Carrot, barberry and pine nuts rice topping

I wrote the basmati rice recipe a few months ago with the intention that I would follow it with this topping post. But due to many circumstances ( pregnancy, Ramadan and Eid, back to school preparation) it got pushed further and further down the list.

Now with the kids back to school and the house is in order for the first time in three months, I am  back to routine. Also,  I finally designated a small place in our house to be my "studio" for food photography which I am finding makes taking pictures a lot easier and quicker.

I love this rice topping for all the flavors it combines. Sweet carrot, tangy barberry and nutty pine nuts. Which all goes well with the subtle flavor of basmati rice.

It also highlights one of the most unique ingredients to Iranian cooking; barberries (known as zereshk).  Dried , they are small with a  beautiful crimson color , sour with a hint of sweetness. If you haven't tried them before, they are very similar to cranberries, although smaller and less sweet.

It could be hard to get your hands on them if you don't live in the middle east, but if you do, please give this recipe a try..you won't be disappointed.

Carrot , barberry and pine nuts rice topping recipe

Ingredients:
1 medium carrot , slivered
1 Tbsp butter
a dash of salt
1 tsp sugar 
1 1/2 Tbsp pine nuts
1 1/2 Tbsp barberry
1 Tbsp saffron water (optional)

Instructions:


- In a small skillet, melt butter over medium low heat.
- Saute carrot in butter until it softens and begins to brown. 
- Add barberry, sugar, salt and pine nuts. Continue to cook over medium low until pine nuts begins to brown, being careful not to burn the barberry.
- Remove from heat and add saffron water. Serve with basmati rice.

    1. Thank you Kulsum. No you didn't miss the news about my pregnancy...I kept quiet about it...it's the only time I mention in in the public :)...I am due in November.
      Prop shopping sounds great! Anything to get to meet you :) And that enamel comes from my mom's kitchen
